The Simple Woman's Daybook



For today.....Tuesday, January 24,  2012


Outside my window....it's a cold, overcast and foggy day outside. The forecast right now is 40 degrees, with a high of 57 degrees expected. The fog is supposed to burn off later, so we should hopefully have some sunshine.


I am thinking.....Megan and Parker came by yesterday morning for a few hours. It was nice to have them visit. Parker was really happy to spend some time with his grandpa! ♥


In the kitchen.....I'm going to fix spaghetti and a green salad for dinner.

A couple of ladies asked if I would share the Cherry Chicken recipe from last week. Thank you for asking...

Cherry Chicken
4 boneless chicken breasts
1 jar cherry preserves
1 egg
Italian bread crumbs
small amount of oil

Rinse chicken and pat dry. Beat the egg and place on a plate. Put the bread crumbs on another plate. Dip the chicken breasts in the egg, and then in the bread crumbs. Place in a pan with a small amount of oil. Fry the chicken on low until almost cooked through. Open the cherry preserves and pour over the chicken. Turn the heat up to medium, and cook until chicken is done and tender, and preserves heated through. Serve with white rice.

Lately I have been preparing the chicken in the egg and breadcrumbs, and then put them in the crock pot to cook. I pour the preserves over the chicken and cook on low for three hours, or until the chicken is tender. I serve with rice, the preserves make a nice topping for the rice. (I usually buy my cherry preserves at Trader Joe's. I think they taste like cherry pie filling. Though any preserves would work.) It's an easy recipe to prepare, especially in the crock pot, and we all enjoy it. I hope you will too! :)


I am wearing.....blue jean skirt, grey colored long sleeved top, light blue hoodie sweatshirt, tights.


I am going....I plan to stay close to home this week. We babysit Parker tomorrow and Thursday. Yesterday was Ric's birthday. We are taking him out to celebrate on Friday evening. (That's the only time that Michelle will be able to join us.)


I am reading....not reading any new books this week.


I am hearing.....William has the tv on, and is watching a fishing program. He is having his fishing boat repaired right now, and can't wait to get back on the water! :)


Around the house..... weekly housework and laundry. I'm decluttering some drawers in my bedroom. (They've really needed it!)


One of my favorite things.....watching favorite tv programs with Megan. We watched the current episode of Downton Abbey yesterday, as well as an episode of another favorite show we both like. Has anyone else been watching Downton Abbey?



A few plans for the rest of the week....

....taking care of Parker Wednesday and Thursday
....grocery shopping Friday afternoon
....celebrating Ric's birthday Friday night
....going out for coffee with my sister Saturday afternoon
....church on Sunday


A peek into my day....Parker and William's hat's were side by side on the counter. I thought they looked so cute! :)


Edited to add: I also want to mention that I've been having a difficult time leaving comments on some of the blogs I read, especially if there is Word Verification. It won't allow me to get past the word verification, or I can't get into the comment section at all. I find it frustrating!! I guess this is a Blogger problem, I'll have to check. Has anyone else had this problem? I just wanted you to know that I have been visiting your blogs, I'm just not able to always leave a comment. Hopefully this will be resolved soon.

    Your meal looks so good.

    I am loving Downton Abbey. Another one that I have found about England is Elizabeth Gaskell's "North and South" with Richard Arm*tage. It is about a family that moves from South England to the Northern area and the Cotton mills.
