It's hard to believe that Thanksgiving is just around the corner. We are having my family over for the holiday, plus my sweet MIL. I want to share some holiday recipes that my family enjoys.
William's favorite ice cream is Rocky Road. I found this fudge recipe, and he loves it! (But, then again, he loves anything chocolate!)
Rocky Road Fudge
2 cups semi sweet chocolate chips
1 can (14 oz) sweetened condensed milk
2 tbsp butter or margarine
2 cups walnuts or peanuts
3 cups miniature marshmallows
In a large saucepan, combine the chocolate chips, condensed milk and butter. Cook and stir over medium heat, until the chips are melted, and mixture is smooth. Remove from heat, stir in nuts and marshmallows. Spread into a greased 13x9x2" baking pan. Refrigerate until firm. Cut into squares.
These cookies are William's favorites. His sister gave the recipe to me when we got married. These cookies are made all through out the year. They are good, but very sweet! (William made some for our Bible study group last week.)
Chocolate No Bakes
4 cups sugar
1/2 cup cocoa
1 cup milk
1 cube or 1/2 cup margarine
1 cup peanut butter
1 tsp vanilla
6 cups quick cooking oatmeal, or 4 cups oatmeal & 2 cups coconut
Mix sugar, cocoa, milk and margarine in a large pan. Stir over medium heat until mixture comes to a boil. Let boil for one minute. Remove from heat. Beat mixture, then stir in peanut butter and vanilla until smooth. Add oatmeal and coconut and mix well. Stir until everything is mixed. Drop mixture by rounded spoonfuls onto waxed paper. Let set until firm.
The recipe calls for quick cooking oatmeal, but I use old fashioned oats and that works well too.
This jello salad has been part of our holiday meals for many years.
Cranberry Pineapple Salad
1 package (6 oz) raspberry flavored jello
1 3/4 cups boiling water
1 can (16 oz) jellied cranberry sauce
1 can (8 oz) crushed pineapple, undrained
3/4 cup orange juice
1 tbsp lemon juice
1/2 cup walnuts
In a large bowl, dissolve the jello in boiling water. Break up the cranberry sauce, and stir into the jello. Add the pineapple, orange juice, and lemon juice. Chill until partially set. Stir in the nuts. Chill until firm.
(Right after I stir in the nuts, I usually pour the jello into the bowl I am going to serve it in. That way the bowl isn't a mess from stirring everything together.)

Lovely recipes - but we measure things a bit differently here in England. How much is a 'cube' of margarine, please??
